In 2003 after Palmira was diagnosed with coeliac disease we both began adapting and testing our own family recipes, with such success, that the idea for this book was born.

We are not professional cooks, just two ordinary women who share not only a special friendship but a love of the kitchen and cooking for our families.

Our aim was to remove wheat, rye, oats and barley from our recipes and still serve tasty, delicious and economical food not only for the coeliac but family and friends as well.

All our recipes have been carefully prepared with readily available ingredients and the resulting photographs are untouched in any way.We have included soup, risotto, pasta, meat and vegetable dishes, dessert, party food for the kids as well as bread and pizza.

We have put together an assortment of our favorite recipes in a well illustrated, easy to follow Gluten Free Italian Cookbook for you to enjoy.

How are you?
 
I bought your book some time ago, however have only recently acquired e-mail and internet.
I just love your book! I use it on a regular basis.
My favourite recipes are:
Pizza
Mushroom Risotto
Funghi  Ripeni (my boyfriend loves them!)
Zucchini and Bacon Soup
Cream of Chicken Soup
Meatballs in tomato Sauce
Ricotta Cake and
Chicken nuggets to name a few.
As well as been on a low sodium diet, for personal and health reasons, I am also  very fructose intolerant so I have had to cut down on the amount of tomato puree and use water to dilute just a few of the recipes. This took some practice! I was just so glad the recipes turned out with great texture and flavor. As you had both intended them.
 
I just wanted to say Thanks for such a terrific book and it has helped me so much in making the evening meal and just in my daily life, especially with the soups. I just Love soup!

My name is Simona and I just wanted to drop you a line to a) thank you and b) advise you that I have purchased your first book today.
 
I came across your second cook book at the EXPO late last year and being the skeptic that I am, I only purchased the second (and latest) book out of curiosity really ... i was in search of a good gluten free bread recipe. My husband has Coeliac. He is Chilean and I am Italian - we have tried what seems every single gluten free product out there and he is so over the taste and has become so fussy that my mum and I make most of his food - pasta, pizza .... Your book has been the BEST investment I have ever made in a gluten free product. My husband ADORES the bread I make from your book and this week we gave my mum a rest from pizza duty and I made it using your recipe and my husband now tells me my mum can retire and I can take over. I know it may sound trivial but I am sure you ladies can appreciate that as someone who takes pride in her cooking this words coming from my husband just made my day.
 
So... I have bought your first edition cook book so as to expand my gluten free kitchen. I cannot wait for it to arrive.
 
So again, THANK YOU so very very much for your hard work in experimenting and then putting your recipes in a book .... Please know that I am very appreciative of you efforts.
